One of my goals for 2012 is to be better at planning. Specifically meal planning. I work downtown so I have plenty of opportunity to eat out during the work week. It's faster, easy and I don't have to think about it in the mornings. As we all know, eating out that much gets expensive and unhealthy. Here is my solution to this issue. The past two weeks, on Sunday, I assembled these salads.
Here are all the ingredients. I love a Craisin, goat cheese salad right now.
I just made a salad assembly line. I added a carrot to one. I got bored with it. I did add some walnuts I had on hand to a few of the salads.
Ok this is the best part. These Glad ware containers are amazing! They come with a little tiny cup that fits up in the larger bowl's lid. See!!

Look at this beautiful stack of salads! Then in the morning I can grab one, grab a little protein (usually leftovers from the night before) stuff it in my purse and go! It's all about setting myself up for SUCCESS!!
I also have a friend at work who I eat lunch with most days of the week. We decided for the month of January we would bring our lunch at least 4 out of 5 days. This goal has given me some good structure. The bonus part of all this planning is DG loves to have a salad to grab on the way to work as well. Plus the little dressing cup makes it easier for him to eat a salad on the go.
